For those following a plant based, a vegan diet, or simply looking for a healthy local choice, Bisara (crushed fava beans purée cooked with Egyptian herbs and served with caramelised onions) is a perfectly nutritious, aromatic and colourful meal. Here is the recipe for you!

Prep time: overnight for soaking beans
Cooking Time: 60 – 75 minutes

  1. 500 gm peeled fava beans (Foul Madshoush)
  2. 2 large onions
  3. 10 large garlic cloves
  4. 2 bunch each freshly chopped parsley, dill and coriander
  5. 1 tbsp cumin
  6. 2/3 tbsp ground coriander



1-Rinse the beans and soak over night, changing the water a couple of times

2-Strain the beans and place them in a large pot with onions, parsley, fresh coriander, dill, garlic, and water.

3-Bring to boil, cover the pot and lower the heat to low, let cook for an hour until the beans are tender.

4- Caramelise the onions until golden brown.

5-Blend the beans, adding water if needed, until you reach a creamy texture.

7-Season to taste with salt, pepper, cumin, ground coriander

Pour the puree “Bisara” in small plates and sprinkle with caramelised onions, serve immediately or let cool then refrigerate to serve as a cold appetizer.
